Soft and chewy blondies
These are pretty much the best blondie recipe I've ever tried. They are soft and chewy, and you can throw in whatever baking chips or nuts you like!
cup (2 sticks)
1 and ¼
large eggs plus 1 large egg yolk
2 and ¼
white chocolate chips
semi-sweet chocolate chips
Preheat your oven to 350°F. Generously grease or line a standard 9"x13" baking pan and set aside.
In a large bowl, mix together the melted butter and sugars. Add in the eggs, egg yolk, and vanilla and stir well until uniform.
In a separate medium sized bowl, whisk together the flour, corn starch, baking powder, and salt. Transfer this to the large bowl with the wet ingredients. Mix well until everything comes together.
Fold in the white chocolate and semi-sweet chocolate chips if using (or use any other baking chips - like butterscotch, maple, peanut butter, etc. You can also add nuts too).
Transfer the batter to your prepared baking pan and smooth the top. If desired, sprinkle additional baking chips on top.
Bake in your preheated oven for 25 minutes or until the sides start to turn a light golden color.
Allow the blondies to cool before slicing and serving.
Leftover brownies should be stored in an airtight container at room temperature and will last several days.
