These fun s'mores cookies uses s'mores baking chips with mini graham crackers, chocolate chips and bite-sized marshmallows!

1 and ¾cupsall-purpose flour
¾cup (1 and ½ sticks)unsalted buttersoftened
17-ounce packageHershey's S'mores baking pieces
Preheat your oven to 350 degrees F. Line two baking sheets with parchment paper or silicone mats and set aside.
In a medium sized bowl, whisk together the flour, baking soda and salt. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl if using a handheld mixer, cream together the butter and sugar on medium speed until light and fluffy, about 2-3 minutes.
Add the egg and vanilla and mix until well blended.
Turn the mixer to low and slowly add in the dry ingredients. Mix until everything just comes together.
Fold in the s'mores baking pieces, saving about ½ to ¾ cup of it for later.
Using a cookie scoop or two spoons, scoop about a golf ball size of dough onto your prepared baking pan. Make sure to leave at least 2-3 inches between each cookie dough ball.
Bake in your preheated oven for 8-10 minutes or until the edges are set. The center may appear underdone but that's OK. It will continue to set as it cools.
After you've taken the cookies out of the oven, press more s'mores baking pieces to the tops for s'more goodness!
Leftover cookies should be stored in an airtight container at room temperature and will last for several days.Source: Hershey's
