Chocolate mug cake

  • 4 Tablespoons cake flour can substitute all-purpose, but it won't be as fluffy
  • 4 Tablespoons granulated sugar
  • 2 Tablespoons unsweetened cocoa powder I used Hershey's Dark
  • 1/4 teaspoon baking powder
  • Pinch salt
  • 1/4 teaspoon vanilla extract
  • 3 Tablespoons Hellmann's mayonnaise
  • 3 Tablespoons milk of your choice I used soy

Chocolate mayonnaise frosting

  • 1/2 Tablespoon cocoa powder
  • 1/2 Tablespoon Hellmann's mayonnaise
  • 1/2 teaspoon vanilla extract
  • 2 Tablespoons powdered sugar
  • 1 teaspoon milk of your choice I used soy


Make the cake

  • Using a fork, thoroughly mix all ingredients in a large coffee mug. Microwave on high for 1 and 1/2 minutes. A toothpick inserted in the center of the cake should come out clean. Allow the cake to cool for at least 5-10 minutes before frosting.

Make the frosting

  • In a small bowl, whisk together the cocoa powder, mayonnaise and vanilla extract. Slowly whisk in the powdered sugar and milk. Add more powdered sugar or milk as needed to achieve your desired consistency. Frost on top of the mug cake and enjoy.
