Easy pumpkin bread

  • 1/2 cup unsweetened applesauce
  • 1/3 cup light brown sugar
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/3 cup water
  • 3/4 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice


  • Preheat your oven to 350 degrees F. Generously grease a standard 9"x5" loaf pan and set aside.
  • In a large bowl, beat together the applesauce, sugars, eggs, water, pumpkin puree and vanilla. Add the flour, baking powder, baking soda, salt and pumpkin pie spice. Mix until just combined - do not over mix.
  • Transfer the batter to your prepared baking pan and bake in your preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool completely (preferably overnight) before slicing and serving.


Leftover bread should be stored in an airtight container at room temperature and will keep for about a week.
