Sourdough discard chocolate chip bread

This wonderful chocolate chip bread contains almost a full cup of sourdough starter. It gives the bread a bit of tang and is perfect for breakfast or a snack!

I’m pleased to share that my sourdough starter is still thriving and doing well. I’ve remembered to feed him, and he’s pretty bubbly and happy. Hopefully I will continue to care for him because when he died last time, I was pretty devastated.

In order to keep reminding myself to feed my sourdough starter, I’ve tried to actively make some recipes with the discard. This time, I found a chocolate chip bread that uses almost an entire cup of the discard. In fact, I made this bread twice in two weeks. Once, I made it with butter, and the second time I swapped the butter with unsweetened applesauce.

Honestly, I liked it better with the applesauce. The butter version ended up a bit on the dry side, even though I baked it for a lot less time than the original recipe suggested. The applesauce, on the other hand, provided some much-needed moisture in the bread and prevented it from drying out after a day.

The other small edits I made were to add more cinnamon and a pinch of nutmeg into the batter. Even with those small additions, it gave the bread more depth of flavor.

I hope you enjoy this bread as much as we did!

Ingredients

  • 1 stick (8 Tablespoons or ½ cup) unsalted butter melted; I recommend replacing this with ½ cup of unsweetened applesauce instead
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • pinch nutmeg
  • 1 teaspoon vanilla
  • 2 large eggs
  • ¾ cup sourdough starter discard unfed
  • ¼ cup milk of choice (or water)
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup chocolate chips

Instructions

  • Preheat your oven to 350℉. Generously grease or line a standard 9"x5" loaf pan and set aside. I used a silicone loaf pan and did not line or grease it.
  • In a large bowl, mix together the melted butter (or applesauce) with the granulated and brown sugars. Then add the ground cinnamon, ground nutmeg, vanilla, eggs, sourdough discard, and milk. Mix well.
  • In a medium sized bowl, whisk together the flour, salt, baking powder, and the baking soda. Slowly add this to the large bowl with the wet ingredients. Mix until a few dry streaks remain.
  • Fold in the chocolate chips and mix until everything just comes together. Do not over mix.
  • Transfer the batter to your prepared loaf pan and smooth out the top.
  • Bake in your preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool before slicing and serving.

Notes

Leftover bread should be stored, covered, at room temperature and will last for several days. If you store this in the refrigerator, make sure you place it in an airtight container or else the bread will dry out pretty quickly.
