Sourdough discard banana bread (one bowl)

I have some sad news. My sourdough starter, aptly named Pumbaa, Jr, died recently. I usually fed him about once every 2-3 weeks, but I must have gotten busy with life because when I went to go feed him, he died. It was past the point of revival, and I was very, very sad.

Luckily, I had given part of Pumbaa, Jr. to my bestie K, so I asked her to kindly share some of him back. With the little bit of discard she was able to part with, K was able to help me preserve Pumbaa back to his original glory. After I fed him, he was happy and bubbly all over again.

I used some of the discard to make this banana bread. Best of all, this recipe is made in one bowl so there is not a lot of cleanup. I jazzed up my bread with som ground cinnamon and nutmeg and think it could have used some chocolate chips in the batter for a different texture. While the bread was good, it wasn’t as memorable as I was hoping it would be.

Now that Pumbaa, Jr. is happy and well, I can research some additional recipes to feature him. Hooray!

Ingredients

  • 1 pound ripe bananas I used 4 large, frozen bananas, and thawed them out
  • ½ cup sourdough discard unfed is fine
  • 4 Tablespoons unsalted butter melted
  • 2 large eggs
  • ½ cup brown sugar packed
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • pinch ground nutmeg
  • ¼ teaspoon salt
  • 1 and ¼ cups all-purpose flour
  • chocolate chips or nuts optional

Instructions

  • Preheat your oven to 350℉. Generously grease or line a standard 9"x5" loaf pan and set aside. I used a silicone loaf pan and did not line or grease it.
  • In a large bowl, mash the bananas. Add in the sourdough starter and mix well.
  • Add the melted butter and mix well. Then add the eggs and mix.
  • Add the brown sugar, vanilla, and mix well.
  • Gently sprinkle the ground cinnamon, ground nutmeg, baking soda, salt, and flour on top. Fold this into the wet ingredients and gently mix until everything just comes together. Do not over mix. If you want to add chocolate chips or nuts, add them when a few dry streaks remain and fold until everything comes together.
  • Transfer the batter to your prepared baking pan and smooth out the top.
  • Bake in your preheated oven for 50-55 minutes or until a toothpick inserted in the middle comes out only with mashed bananas (not batter).
  • Allow the brea to cool before slicing and serving.

Notes

Leftover bread should be stored, covered, at room temperature or in the refrigerator and will last several days.
