Pie crust cookies

If you have leftover pie crust, don’t throw those scraps away – make cookies with them instead!

I was thankful to have Veteran’s Day off last month. My plans were to skate in the morning and bake an apple pie in the afternoon (and yes, I thanked a Veteran that day, as my pairs partner was in the Navy).

After I assembled my apple pie, I had a bunch of pie crust dough left over. Normally, I’d freeze it or throw it away, but this time, I decided to roll out some cookies with it.

I used my rolling pin to roll the dough out to about 1/4″ inch thick, then I used a cookie cutter to create some fun shapes (chickens, in my case). Finally, I topped it with some cinnamon sugar and baked them in my oven for about 9 minutes – it was in the oven at the same time as my pie.

The leftover crust dough that I had only yielded 3 cookies, but it was better than tossing the scraps into the trash. I liked the addition of the cinnamon sugar to make the cookies slightly sweet, while maintaining its flaky, buttery crust texture.

Ingredients

  • leftover pie crust dough see recipe below
  • cinnamon-sugar mixture

Pie crust dough (enough for pie crust plus a lattice top)

  • 2 and ½ cups all-purpose flour
  • ½ Tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter cold and sliced
  • 7 Tablespoons ice water

Instructions

  • Preheat your oven to 350℉. Line a baking sheet with parchment paper or a silicone mat and set aside.
  • Lightly dust a flat surface with all-purpose flour. Using a rolling pin, roll out the excess pie crust dough about ¼" thick.
  • Use a cookie cutter (or the top of a glass turned upside down) to cut out fun shapes.
  • Sprinkle with cinnamon sugar thoroughly over the top of the cookie.
  • Bake in your preheated oven for 9-11 minutes.
  • Serve and enjoy!

Notes

Leftover cookies should be stored, in an airtight container, at room temperature and will last a few days. Like pie crusts, they will start to get a bit soggier each day.
