Oreo stuffed chocolate chip cookies

Soft and chewy chocolate chip cookies are stuffed with an Oreo inside!

Addie the baker is back at it again. She surprised us twice – once with these fun cookie treats, and twice with the addition of an Oreo stuffed inside. Neither my husband nor I expected to see a full Oreo cookie inside each of these cookies, yet there they were.

The beauty of these cookies is that despite having an entire sandwich cookie in the middle, the exterior of the cookie was still soft and chewy. I would have expected them to be a bit dry and crumbly, but they were the complete opposite of that.

I’ve heard about these types of stuffed cookies before but it never piqued my interest to try baking these. They felt like a lot more work than your standard cookie. I know that this involved wrapping the cookie dough around another cookie, and ensuring that none of the Oreo cookie was protruding before baking. But since I didn’t have to do any of the work (ha!), I was certainly happy eating these cookies.

One thing I loved about this (besides not having to lift a finger) was that the cookies baked up beautifully. I love a thick, chewy cookie, and because there was an Oreo stuffed inside, the cookies baked up nice and tall. There were no sad, flat cookies here.

I bet these would be fun to make with other Oreo varieties – peppermint, lemon, pumpkin, etc. Let’s see what Addie bakes next!

Ingredients

  • ½ cup (1 stick or 8 Tablespoons) unsalted butter softened
  • ½ cup brown sugar packed
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and ¾ cup all-purpose flour
  • 3 Tablespoons corn starch
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅔ cup chocolate chips
  • 9 chocolate sandwich cookies, such as Oreos

Instructions

  • Preheat your oven to 350℉. Grease or line two baking sheets with parchment paper (Addie used two silicone mats and did not grease it).
  • In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl if using a handheld mixer, cream the butter and sugars together on medium speed until light and fluffy, about 2-3 minutes.
  • Add the vanilla and the egg and mix well.
  • Turn the mixer to low and slowly add in the flour, corn starch, baking soda, and the salt. Mix until a few dry spots remain.
  • Fold in the chocolate chips until no dry streaks remain.
  • Using a medium or large sized cookie scoop (or two large spoons if you don't own a cookie scoop), scoop out some cookie dough and place it in the palm of your hand. Flatten it a bit and put an Oreo cookie in the middle. Using your free hand, wrap the dough around the Oreo so that nothing is sticking out. Shape it into a ball by rolling the dough in between the palms of your hands. Place this on your baking sheet and repeat with the remaining dough.
  • Make sure you allow about 2" of space between each cookie dough ball. These will spread while baking.
  • Bake in your preheated oven for about 9-10 minutes. The dough may appear to be underdone in the middle after baking. That's OK. The cookies will continue to set as they cool. You don't want to overbake these!
  • Allow the cookies to cool completely before serving.

Notes

Leftover cookies should be stored in an airtight container at room temperature and will last several days.
